Quinoa Bars with Kañiwa

Ingredients

1 cup quinoa, rinsed

2 cups water

1 1/2 cup chopped walnuts

1 cup brown sugar

1 cup rice flour

1/2 cup gold or black raisins

1/2 cup chopped dates or dry apricots

1/2 cup boiled kañiwa

1 tsp baking powder

1 tsp ground cinnamon

1/2 tsp baking soda

1/2 tsp ground cloves

1/4 tsp nutmeg

1 stick butter, melted & cooled

1/2 cup orange juice

2 tbsp vanilla extract

3 eggs, lightly beaten

powder sugar for dusting

Directions

1Preheat oven to 350°F.

2Place quinoa and water in a saucepan, bring to a boil, and cook for 12 min or until all water has been absorbed. Remove from heat and let cool.

3In a mixing bowl, combine the remaining solid ingredients; mix well.

4Add cooked quinoa, butter, orange juice, vanilla and eggs; mix thoroughly.

5Transfer to a buttered and floured 13’’ x  9’’ baking pan.

6Bake for 45 min or until a toothpick inserted comes out clean.

7When ready, let cool on rack & cut into squares to the desired size.

8For an extra sweetness + garnish dust with powder sugar.
