Quinoa with Dried Fruits & Nuts

Quinoa, the supergrain, the superfood! Many out there are discovering it’s multiple benefits and delicious flavour, so why stay behind? Perfect combination of dried fruits and nuts with the awesome multipurpose quinoa.
- Prep: 10 mins
- Cook: 40 mins
1Make sure you have all ingredients ready to start.
2Preheat oven to 350°F.
3 Place raw quinoa in a saucepan, add the water and mix the salt.
4Bring to a boil over medium heat, cover and simmer for 12 minutes or until quinoa has absorbed all the liquid.
5Remove from heat, cover, and let rest for 5 minutes
6 In a large skillet, heat the canola oil and butter over medium heat.
7Add the raisins, apricots, cranberries, almonds, and pistachios. Cook, stirring occasionally, until the raisins “plump up” (about 3-5 minutes).
8Add to quinoa, mix well and transfer to a baking dish. Bake for approximately 20 min.
9Remove from oven, transfer to a serving dish and sprinkle sugar and cinnamon .
